I LOVE pumpkin! These are sooooo good!
2 Tbsp yeast
1/2 c warm water
4 eggs
1 c shortening
1 c canned pumpkin
1 c warm milk
1/2 c sugar
1/2 c brown sugar
1/3 c instant vanilla pudding mix
1/3 c instant butterscotch pudding mix
1 tsp salt
7-8 c flour
Filling:
1/4 c butter, melted
1 c brown sugar
2 tsp cinnamon
Icing:
3 Tbsp water
2 Tbsp butter, softened
1 tsp cinnamon
2 c confectioners sugar
1 1/2 tsp vanilla extract
In a large bowl, dissolve yeast in warm water. Add eggs, shortening, pumpkin, milk, sugars, pudding mixes, salt & 6 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth about 6-8 min. Place in greased bowl, turning once to grease top. Cover & let rise in warm place until doubled, about 1 hour. Punch dough down; divide in half. Roll each portion into a 12 x 8 inch rectangle; brush with butter. Combine brown sugar & cinnamon; sprinkle over dough to within 1/2 in. of edges. Roll up jelly-roll style, pinch seams. Cut each into 12 slices. Place cut side down in 2 greased 13 x 9 x 2 in baking pans. Cover & let rise until doubled, about 30 min. Bake at 350 degrees for 22-28 min. In a small bowl, combine water, butter & cinnamon. Add confectioners sugar & vanilla; beat until smooth. Spread over buns & serve warm & Enjoy!!
*this gives you 2 dozen cinnamon rolls!

I made these this wkd, very good! I'm trying to find a way to bring out the pumpkin flavor, but the pumpkin makes them very moist! Great recipe
